If you’ve got a slow cooker
Slow cookers are a godsend for both winter meals and busy people. Load the ingredients in the morning and come home to a meal that’s close to ready. It sounds good to us!
1 Slow Cooker Enchiladas. This recipe is a minimal effort, maximum taste situation. With just ten minutes of prep in the morning you can enjoy some seriously tasty chicken enchiladas when you come home.
2 Vegan Chickpea Curry. Legend has it that the Women’s Weekly Kitchen test their recipes to the nth degree to ensure they have a 100% strike rate. This plant-based curry is another classic from their repertoire and is packed with goodness to keep you cosy on chilly nights.
3 Slow Cooker Chicken Ragu with Herbed Ricotta. This recipe makes the most of chicken thighs to create a pasta dish that would put your local bistro to shame. The best part? All the hard work here is done by the slow cooker.
4 Brown Rice Beef Biryani. Everything you know and love about biriyani – but done with brown rice.

5 Easy 9 Minute Broiled Teriyaki Salmon. Kale Junkie’s Nicole Modic knows a thing or two about getting dinner on the table for her family with no time to waste. For this recipe, you’ll need about 15 minutes to make your teriyaki sauce from scratch (of course!) and marinate your salmon. But your reward is an easy and outrageously tasty meal that takes a swift nine minutes under the grill.
6 White Beans and Asparagus with Charred Lemon. Say hello to a comforting bowl of beans with a surprisingly complex flavour profile, thanks to the inclusion of charred lemon. It comes together in 35 minutes and lends itself to all kinds of substitutions and adaptations.
7 Jacket Potato with Whipped Feta and Sumac. Yes, it takes about an hour to cook the potatoes in the oven, but jacket potatoes are the very definition of ‘set and forget’ when it comes to cooking. The ten minutes spent on prepping the whipped feta and sumac take the humble baked spud to a more elevated place that makes it meal-worthy.
8 Glorious Green Goddess Pasta. Sophie Waplington makes ‘plant-based meals without rules’ and this pasta is another cracker from her popular Instagram page. It comes together in 20 minutes and keeps well for lunch the next day too. And if you’re wondering what “nooch” is, it’s shorthand for nutritional yeast and is readily available from supermarkets or health food shops.
9 Green Veggie Fritters. If you’ve got leftover greens from a previous meal in your fridge, you’re more or less halfway to having this straightforward fritter recipe on the table.

12 Halloumi Traybake. Delicious! Easy! Vegetarian! This traybake recipe ticks all the boxes.

15 Vegan Burrito. It’s a truth universally acknowledged that everything tastes better in a wrap. This recipe by The Minimalist Baker has brought together all the ingredients of a fast-food burrito here and made it super healthy – and tasty!
